I have found that this recipe works well with any good liquid ale yeast, but the very best results seem to be with White Labs California Ale, or English Ale. Remember, if you are doing 5 gals, split everything in half. I brew it 6 times a year, and it never lasts long in my neighborhood. Enjoy.

Single infusion mash in 28 qts at 155 degrees for 60 min. Sparge with 30 qts, collect 12 gallons of wort. Boil for one hour, add hops to schedule. Add honey as soon as you turn off heat and add the last hops, stir well.
