This was my first attempt at such a beer. After 1 month of bottle conditioning I tried one. It was pretty good. Very high alcohol content with a thick malty taste. I suspect it will get better with age.

Batch Size: 6 Gallons
Starting Gravity: 1.086
Finishing Gravity: 1.008
Time in Boil: 1.5 Hours
Primary Fermentation: 1 week
Secondary Fermentation: 2 weeks

Procedure:

Used single step infusion mash. Added 170°F stike water to grain to mash in at 150° F. Held for 1.5 hours. Sparged at 170°F. Brought wort to boil, then added honey and molasses. Brought back to boil. Let boil for 30 min. then added 2 oz of fuggles. Boiled for additional 45 min. then added 1 oz fuggles, and Irish moss. Boiled for 15 more min. Chilled wort and pitched with 1 pint of starter.
