This is a very light ale that retains a high alcohol content. It is very pleasant with a slight citrus tang and aroma. Enjoy!

Procedure:

Dissolve extracts and honey in 2 gal. of water as you bring it to a boil. Add 1/2 oz. tettnang as boil starts. Add 1/2 oz. tettnang @ 30 min. Add 1 tsp. irish moss @ 45 min. Add 1/2 oz. cascade @ 57 min. Remove from heat and add lemon juice @ 60 min. Allow to steep for 5 min. Strain into 2 1/2 gal. precooled water in primary. Rehydrate and pitch yeast when cool.
