Took 15 recipes for Guiness clones and ran through computer to find common threads. This is a great stout. Hot chocolate color head, rich, full bodied. Gets better with age.Many people can't believe it is a home brew.

Recipe type: Partial Mash
Batch Size: 5 gal
Starting Gravity: 1.055
Finishing Gravity: 1.021
Time in Boil: 60 min
Primary Fermentation: 3 wks @ 68 degrees
Secondary Fermentation: 2 weeks

Procedure:

Steep grains in 1 1/2 gals water at 165 for 45 mins. Sparge with 2 gals warm water. Bring to boil, come off heat and add extract and malt, Kent Golding hops and Irish Moss. Boil 60 mins, add hops on schedule. Cool wort and add to 2 or 3 gals of cool water in primary fermenter. (Bring up to 5 1/2 gals) agitate. Pitch yeast at <80 degrees. Rack to secondary after 2 or 3 weeks. Bottled with prime. Can also be kegged sucessfully.
